This question is less about your actual skill set and more about your attitude and approach when faced with a situation like this. In your answer, demonstrate a positive attitude and willingness to learn, your ability to self-help, acknowledge and speak up when you need help or are uncertain about something, and your ability to problem-solve or seek guidance from another team member. It's also beneficial to reiterate that you would never attempt something you weren't trained to do that could jeopardize the safety of a patient.

"When my manager went on unexpected medical leave for three months last year I was asked to step into her position in the interim. I knew the basics but was certainly not trained on the specifics of the role. I was able to take it on successfully by leaning on my team, reading a lot of company manuals, and asking many questions. Once my manager returned, she was very pleased with the progress that I made, and I received a promotion."

"At times, I will be asked to perform tasks in our computer system that I am not completely familiar with. When this happens, I will not ask for help right away. Rather, I will search for the answer either in our manuals or online. I am comfortable taking on new tasks and enjoy learning new skills."

When our CS was getting ready for her maternity leave, I was asked to temporarily take over some of her responsibilities. I had no idea what those responsibilities entailed until I asked her to train me to do so. Once she was able to instruct me in those tasks I had no issue completing those tasks. I was even asked to take on those responsibilities again for vacations and a second maternity leave.
