I’m open and honest with my customers. If I made mistakes, I would apologize. If there are things I can’t do immediately, I will provide them with better estimates of my target timeline. When I have any concerns that may impact my customers, I will inform them as soon as possible.

Try not to focus so much on making mistakes and not completing tasks quickly so the interviewer doesn't form this type of impression of you. Instead, rephrase your sentences to focus on all the positives you offer your clients. And, if possible, include an example of a time when you helped a customer or built a meaningful relationship with one. Great job!
