Tell me about a time you broke the rules as a banquet manager.

"I wouldn't say that I broke the rules, but I enhanced the standard for a detailed event. Our plated dinner standard is to staff one banquet server per 25 people. During a busy weekend, I added additional staff for a detailed event. I had one banquet server for every 15 people because the dinner had wine service and a total of five courses. Even though I utilized more staff on that event, I adjusted other events so that payroll was still in line. All events were serviced properly, and payroll was in line with the budget."
