Most job descriptions will have a long list of requirements. Hiring managers are aware that, to find a candidate that checks ALL of the boxes, can sometimes be impossible. If you are missing some of the "nice to have" or even the "must have" skills listed in the job description, do not fret! Be open about your shortcomings and discuss with the interviewer how you plan to compensate for those.

This is my first job since coming out of education, so I do lack in experience in certain areas. However, I am a fast learner and also enjoy elevating my understanding of complex issues and executing a quality piece of work or a task. I will compensate for my missing skill set through perseverance, learning quickly, and in the meantime, excelling in the tasks I am assigned.

Your response clearly acknowledges that there are certain skills you haven't yet developed and reassures your interviewer in your ability to learn quickly. You may wish to also include any transferrable skills you've developed. (For example, while working at a bar/restaurant may not feel directly transferrable to this role, are there specific skills that you've gained that would translate well? Can you highlight those skills?)
