The main point of asking this question is for an interviewer to hear you talk passionately about your work and why it interests you. Companies want to hire and keep engineers who are passionate about their work, and that passion is often best communicated by sharing the reason you got into structural engineering in the first place.
"I've known I wanted to be a structural engineer since my first trip to New York City as a high schooler. The buildings in the city are just so incredible and exciting to see.
