Telling a manager is definitely a good idea here. You might want to start, however, by observing and gathering information to confirm your co-worker is definitely stealing before accusing them. You might also want to privately approach them first and see if they might be willing to go to the manager with you to confess. Also, don't forget to remind the interviewer that you are an honest and trustworthy individual who wouldn't let something like this slide.
