"If I could choose any area of healthcare services to be a subject matter expert in, I would choose geriatric care. I do feel that this particular focus is not as popular as some, and become an expert in it would allow me to snowball in my career."

"I have a variety of interests within the healthcare service, so that is a tough question for me! I suppose if I had to narrow it to just one area of expertise, I would say palliative care and the necessary family care that comes with it."

I am a versatile person so this is a tough question for me. If I had only one choice, I would choose pediatric care. Children are the future and the future is delicate. A child who lives a longer life than expected could very well grow up to solve age-old survival questions previous generations never could. Many of our most successful today could have very well been that child.

Nice! Here is another way you could phrase your response:
I am interested in so many different areas in healthcare that it's hard for me to choose just one! But if I had to pick, without a doubt I would choose pediatric care. I believe that children are our future, and I want to help as many of them as I can live long happy lives. I enjoy working with children and find it easy to connect with them. I also appreciate their innocence and hopeful nature. So if given the opportunity, I would choose to expand my knowledge in the area of pediatric care.
