I know this position requires flexibility, and I am very happy to flex my schedule and would be very happy to do overtime if needed. In previous positions, I have had to work on-call. As a result, I am always available.

You sound very willing and enthusiastic - words that any interviewer should be happy to hear :) I recommend keeping your answer personalize for you. For instance, you suddenly bring in 'we' language partway through the response. I've offered a slight revision to help with the flow.
