It's a good idea to also focus on the fact that you have the skills required for the role, education aside. Rather than starting your answer on a negative (i.e., not very much), I recommend spinning this with as much positivity as possible. I have provided an example below.
"I am diligent when it comes to continual education and growth. I have taught myself new skills, such as (list some relevant and transferable skills). Although I have minimal formal post-secondary education, I bring a great deal of knowledge in (list your top skills or areas of expertise)."
