The interviewer wants to hear that you do not allow stress to get the best of you. Start off by sharing that you recognize your role as a professional is to act professionally at all times. You recognize that stress comes with almost any job, and you understand how to manage it effectively. Next, share what you do to decompress. You might share that you enjoy going to the gym each day. You might share that you play softball after work to relax. Or, you might share that going home to play with your kids allows you to focus your thoughts on something else allowing you to relax.

This is a helpful outlook to have when it comes to stress. Perhaps consider expanding your answer a bit more by talking the interviewer through the steps you take to handle stress. See below for another way you might answer this question.
I am the type of person who thrives in stressful situations. Rather than dwelling on the negatives of stress or allowing myself to feel overwhelmed, I reframe the situation as a positive one by viewing the stress as a learning opportunity. To avoid feeling in over my head, I always try to break bigger tasks down into smaller ones, and then I focus on one small task at a time. Tackling smaller tasks one at a time helps me to mentally cope with stress. I also take steps to relieve work stress by talking to and relaxing with friends and family outside of work, taking walks during my lunch break, and listening to music that I love during my commute.
