While learning the ins and outs of other industries is the biggest learning curve for me, I see it as a great opportunity for me to become more proficient and effective in the work that I'd be doing for you."

As you can see from my resume, most of my experience has been working with hospitals or companies whose products serve hospitals and small practices. I do not have as much experience with other areas in life sciences. However, if I were hired, I would thoroughly research the clients here at Vynamic and speak with as many industry experts that I know through business networking. While learning the ins and outs of other areas in the life sciences is a learning curve for me, I see it as a great opportunity for me to become more proficient and effective in the work that I'd be doing for you.

This is a good answer because you tell the interviewer about an area of weakness and how you plan to fix it. You can also mention that branching out into a different life science area will allow you to become more well-rounded, and perhaps there is a way you can relate how your current network and knowledge will benefit this new company as well.
