This is more of a personal interest question, and you cannot give a wrong answer here. Think back to any of the founding fathers (and mothers!) of animal medicine and try to discuss someone with a story that resonates with you. It's a great idea to think of the most burning question you would have for that individual. Add passion to your answer so the interviewers can sense your interest.
