I am an avid reader and researcher. I study any topic that I don't know. I currently have EBP as a class so I am consistently researching, and I have the ability to put into English or simpler terms what a study's results are.

Your answer is good; however, try to avoid using acronyms in an interview. If the interviewer is a recruiter or HR personnel, they may not know what that means. Then, the term acts as a distraction from your great response.
"It is important to me that I remain informed on industry changes. I am an avid reader and researcher so, any topic that I do not understand, I will study. Currently, I have an 'evidence-based practice' class, so I am continually researching. I can take the complicated terms used and turn them into simpler terms that are easy for me to understand and consume."
