If a student your were working with had difficulty learning a skill or concept, what would you do?
Your interviewer is looking for a determined and driven Academic Support Coordinator and wants to hear that you will not give up on your students under any circumstance. Explain that you will try another way of teaching the student the information. You may even ask another colleague for ideas to help the student learn. Or, you may offer some simple encouraging words to help motivate the student. No matter how you answer this question, make it clear to your interviewer that you will leave no stone unturned in assisting students to reach their academic potential in this role.
"First, I would do my best to identify where the misstep was taking place. There is some sort of roadblock or hindrance keeping the student from understanding. I would then try various strategies and approaches to teaching the skill. These things include seeing examples, breaking down the process into steps, communicating the information differently according to their learning style, utilizing visual aids, and providing quality feedback. I would adjust my process as I got to know them to best meet their needs."

We would evaluate their current path and see what we can do differently. If we continue to do the same things then it is most likely they will not see a change.

A conversation and evaluation is the appropriate first step so that you can determine the root cause. Can you share more about the techniques you would use? Perhaps you assign them a tutor, or assign skill development projects to help increase their knowledge and confidence, etc.
