This response is a good start, but a bit general. If you are a couple of semesters away, be sure to mention what your education is related to. Yes, this information is likely on your resume, but it would feel unnatural for the interviewer to have to scan your resume mid-interview for the details. Next, if you were to further your education even more so, what topics would be of interest? Anything related to the insurance industry, perhaps?
