As a nonprofit employee, you will be managing multiple projects simultaneously. Prioritizing is a skill that requires practice. There are many approaches you can take. Here are some suggestions:
1) Make a list. By thinking through and writing down each item that needs to be completed, you can see it on paper.
2) Mark what is urgent or essential. Take into account deadlines and meetings.
3) Prioritize each task based on effort and estimated value. Considering due dates and how long it will take to do each item (also considering how much time you have).
Your answer to this question should show the interviewer that you have a system in place to think through what needs to happen and when. The better you can prioritize, the more productive you will be, making you an asset to the organization!

"In my previous role as program director at the Boys and Girls Clubs of America, I was responsible for simultaneously presenting a plan for program improvements, ensuring accurate records pulled for the annual audit, and developing a new program that would allow volunteers to work from home during the pandemic. Each of these tasks had a deadline in the same week. The first step was to make a list of each project, its goals, and the staff members required to carry it out. Next, I placed deadlines on a calendar so that I could physically see when dates were approaching. Finally, I assessed each staff member's task in relation to the overall goal of the individual project to determine which tasks were more complex and which ones were easier to accomplish. This allowed me to prioritize every aspect of the projects and yielded strong results."

Try not to present an unrealistic view of what you can reasonably accomplish to deliver quality results. For example, instead of claiming that you are a workhorse who can manage multiple projects without any problems because of sheer drive and determination, succinctly delineate your process for accomplishing these goals.

"As a communications associate working with a very small nonprofit agency, I was frequently required to manage many projects at the same time. I was responsible for updating all of our social media accounts, maintaining the website, and writing copy for our annual report and donor communications. I was able to utilize technology such as HootSuite to schedule posts for Twitter, Instagram, and Facebook engagement. This was a simple task that helped manage an enormous load of posting and responding to comments. As a result, I had more time to learn the complexities of website development, which was new to me until last year. I always prioritize my tasks in terms of complexity and seek out new technology that allows my work to be done with greater efficiency."
