The interviewer wants to know more about your skills. As an MRI Technologist, you may be responsible for administering IVs for special dye tests. Don't oversell yourself when answering this question. If you genuinely are not comfortable starting IVs, then say so. I am trying to be comfortable with administering an IV; I still need to build up my confidence in administering IV. Till now, I have administered IV to more than 30 patients for an MRI contrast study and got success more than 50%.

Yes, I am very comfortable with that. I have never had an issue administering IV. I have done it many times and even taught student techs at some point in my career.
