It is best to mention some ways you proactively minimize stress levels (exercising, keeping your calendar current, tracking deadlines, scheduling meetings and appointments, etc.) and some ways you cope with stress when it inevitably comes your way. Talk to the interviewer about your ability to manage pressure in the workplace.

"I handle stress very well, and when you call my references, they will attest to this fact. When I am under pressure, I focus on the task at hand and do not get distracted. Staying on deadline is very helpful, and I will delegate when necessary to alleviate some stress. I also make sure to get enough sleep each night, exercise regularly, and keep myself organized to avoid unwanted stress."

This is excellent, and feel free to state this more directly (like: 'I pride myself on being organized, and I achieve this by...'). Mentioning that you exercise is great as well because it shows the interviewer that you know how to relieve stress. You could also talk about a stressful situation during one of your earlier roles and explain how you handled it. Great job!
