Walk your interviewer through the results of your research on their university. Think of your answer as an executive summary as opposed to a book report. Stick to the highlights, but make it clear you took the time to properly research the university prior to your interview. Finally, mention something specific about their department, their mission, a social program they offer, or a recent achievement that you find impressive.
"I know a lot about XYZ University. For example, it was founded in the year (X) by (founders). The university offers a wide variety of degrees including MBA and post-graduate options. I was impressed to learn more about the innovative and excellent work the professors and students are doing within the ABC College of Arts and Sciences and would love the opportunity to support this department as an administrator.
On a personal note, I grew up close to the university and have participated in sporting and social events here since I was a child. It would be wonderful to participate directly in the various diversity and outreach programs in support of my own community and the rich culture here at XYZ University."
