There are two reasons an interviewer asks this question. The first is to ascertain what type of environment you thrive in, which can help the interviewer determine which manager or team you would fit best with based on your answer. The other reason an interviewer asks this question is if the company tends to prefer staff who thrive in one environment or the other because one is more common in their company culture.
"I like working in a predictable environment with a regular routine because it helps me stay organized and on task. With that said, I can certainly adapt to an unpredictable environment from time to time."
Avoid saying what you think the interviewer wants to hear just to make a good impression. If you aren't honest, you might find yourself in a job that's not a good fit. For example, if you prefer a steady workload and want advanced notice about any changes, it's unlikely you'll be happy in an environment where you are regularly asked to adapt to new requests. On the other hand, if you crave variation and like new challenges, you could be bored in a steady environment. Being honest gives the interviewer a chance to assess how well you may or may not fit into the company culture.
"I love it when no two workdays are the same--it keeps me on my toes and keeps my problem-solving and creative thinking skills sharp. Even when my workload is steady, I'll tackle things with a different approach on Friday than I did on Monday just to have some variation."
