"When I started in my current position as a Manufacturing Engineer six years ago, I joined a great group of individuals on my team that had very diverse backgrounds, educations and skills and I was challenged in my thought processes right from the start. My partner on the manufacturing side was born and raised in Japan and educated as an engineer on the west coast. My east coast upbringing in rural area hadn't exposed me to much thinking outside of my own little box. As we worked together, I considered myself a student of his to learn from him and understand his thought processes that went into creative solutions on the floor. In the years we've been working together, I really think that we've learned well from each other and, in looking back, I really value the time we've spent working together so closely."

When I started in my latest position as a product engineer, I very quickly realized the diversity of the team of 15. Half of my team were from the UK, other was from Thailand and Japan. I learned a lot from my Japanese colleagues (especially macro-related shortcuts), and slight different ways of thinking too. We always considered everyone's ideas and picked the most suitable one.

This is a good start, but I suggest being more specific here. Remember that the diversity the interviewer is asking about here isn't necessarily race or nationality, but how you've interacted with different ways of thinking. If you can provide a specific example of an idea you heard that was different from your own and how you navigated a collaborative path forward with your colleague, that would strengthen the outcome of this response.
