How do you define success?
They want to know what success means to you. They are trying to determine whether you evaluate success as your own personal success, the success of your team, or something bigger, like developing a vaccine. All three should come into play in your answer.
"I define success by my ability to reach the goals that are set out for me. On a personal level, the things I wish to achieve in my life. On a work level, the targets that are set out for me as well as the professional development that I seek."
"Success, to me, is achieved when I am pleased with the quality of my work and feel proud to submit it."
Tell the interviewer how you evaluate success. Weave your answer into the success you plan to bring with you to your next role.
Stay away from canned responses, or literal definitions of the word. This will come across as trying to dodge the question or not taking it seriously.

You have the basics down; however since the question is framed, 'How do YOU define success' I recommend avoiding language that removes you from the answer. I have provided an example below.
"I define success as possessing peace of mind. For me, this peace of mind is a direct result of knowing that I made the effort to work hard and become the best version of myself."
