"I always learn best by working hands-on. As long as I know what tasks I am to perform, I am usually able to figure it out and complete those tasks successfully. It is helpful for me to have a mentor or someone who is familiar with those tasks that I can utilize as a resource when I am in the learning phase of my new position."

Some people learn best through demonstration, some learn best by reading and having notes to refer to, and others learn well if they are able to take a more hands-on approach. However, you are best able to learn new tasks, discuss that with the interviewer.
