I find cleanliness to be extremely important, especially in the case of a restaurant, because you want to do everything you can to make you don't make your customers sick. Plus, a clean dining area shows the customers that they will have a pleasant and enjoyable experience.

This is true and a good thought to mention here! Outside of making sure your customers don't get sick by keeping the kitchen clean, you can also talk about how customers also prefer clean tables and bathrooms. You can discuss how cleanliness will help customers to form a trusting, positive association with the restaurant so they keep coming back.
