Theft or stealing is unacceptable. If I come across a co-worker stealing I would report to a higher authority according to company protocol. Approaching them directly would not be professional.

Good response! You come across as thoroughly opposed to theft on the job, which is great, and you explain how you would handle this situation. Outside of reporting your colleague to outside authorities, you might also mention that you could privately meet with your supervisor or HR as well to discuss the situation. Also, before reporting someone you would want to be 100% certain they were actually stealing, so you might also mention that you would take the time to observe and gather information first before accusing. Nice job!
