It's not as important for you to know each step of the exit strategy as it is for you to be able to remain calm. Tell the interviewer, "I stay calm and assist the customers by communicating with my manager and directing them towards the doors in an organized way." You may not know what to do, so focus on how you would act that would assist the staff and the customers.
