Consider the accolades you may have received along the way and discuss them as you talk about your proudest achievement. Another path you could take in your answer is discussing any hurdles you had to overcome to get where you are today. This can display your work ethic and sense of pride to your interviewing team.

When I started in my lab, I never thought my PI would let me take on a project of my own, so when he came to me with the opportunity, I was ecstatic. I created an outline for my project, wrote the proposal, and won a Scholars Award. I have since been working on my project. It had its ups and downs, but I've learned an incredible amount about myself and how research is conducted over these past few months."
