How do you feel about performance incentives?

"I'm a competitive person by nature, so I really enjoy the friendly competition that performance incentives inspire on a team. I think competition actually brings teams closer together, as long as the competition isn't toxic. I'm extremely motivated to do my best work whenever there's a chance to compete, so I'm excited to learn more about the rewards scheme here at Home Bargains."

I am always more "if you stop getting better you stop being good", that said we ran a competition one year to see which store could sell the most Hot Cross Buns and it was really positive: Even got people thinking in a more sales-driven way generally."

      Awesome! Mentioning the hot cross buns competition is a good move. It shows that you're motivated by healthy competition and aware of how important sales are to a company. It's also great that you don't necessarily need performance incentives to push yourself; this shows that you have a strong work ethic (which you might consider saying to the interviewer). But be honest too. If financial incentives like bonuses, social recognition, or verbal/written praise motivate you to perform at an even higher level, definitely let the interviewer know. Great job!
