You can tell the interviewer that you can juggle multiple tasks, but showing an example is much more powerful and will allow him/her to envision your skills in action. The STAR (situation, task, action, result) method will help you build a robust answer. Describe how you juggle multiple tasks as part of your regular duties, the tasks you complete, what actions you took to accomplish them, and the results you reach.

"My current role is very dynamic and requires that I manage a number of applications simultaneously. Currently, I have 12 applications on my desk all with different deadlines and in varying stages of the loan process. I have a tracking system that allows me an at-a-glance view of what's required for each. I rarely miss a deadline because I am organized and my systems are reliable."

"As a loan Processor, I work on at least 5 applications at once, and each application is unique to the borrowers and they all also have different deadlines. My organizational skills allow me to arrange applications in a sequence that works for me, and makes me complete my tasks in order of importance. I personally enjoy juggling multiple tasks because it keeps me busy and I enjoy the pace."

"I have a system to be organized to know which loans are a priority and what needs to be followed up on a daily basis. I am able to review several loans and complete additional tasks that are needed by answering emails and phone calls daily. This also allows me to process more loans and take on more work from others who may be overwhelmed and loan officers who have confidence in the way I work."

You can use this question to your advantage even more by explaining that you do such a good job of balancing multiple priorities that you process more loans than many of your peers, often take on work from others who are overwhelmed, or are requested by loan officers because they have confidence in the way you work.
